Tonight we say goodbye forever to Hearth. As much as we loved our world-cuisine restaurant, it was time for something new, something fresh. And for a long time now, we at One Twenty Six Restaurants have been itching to delve into the wonders of Mediterranean cuisine. Not only is it delicious, it’s also one of the healthiest diets on the planet. So we figured that a restaurant based on the cuisine of Italy, Spain, Greece and France was a win-win for everyone.
And so, tomorrow we open Flight. The dishes are clean, simple and lovingly created. For months now, Mathew (our owner) has been experimenting with different flavors and methods, often using his family as taste-testers. He had to get his hummus up to snuff (after three attempts and a small fortune in chickpeas he succeeded) and play around with the trademark of the Mediterranean diet: fresh, good-quality meat,fish and vegetables, freshly baked bread, and of course, extra-virgin olive oil…(yum)
As with all of our restaurants, each Flight meal is house-made with local, natural and fresh ingredients. We believe in serving the best, and only the best. We want to stay true to the spirit of Mediterranean cuisine and to the spirit of Iowa; that’s why we work closely with Iowan farmers to bring you the freshest meats and produce. Oh, and did we mention that everything on the menu is under 14 dollars?
So we welcome you to join us as our new restaurant takes off.
